Brassica Oleracea
In India, cabbage is grown on large scale in areas with a cool and moist climate. A temperature range of 15 up to 21 ℃ is considered as optimum for growth and head formation of the crop. Cultivation of cabbage is done mainly on sandy to heavy soils, rich in organic matter. Cabbage is ready for harvest at 90 to 120 days after planting and have to be harvested promptly when the heads are firm and mature. Cabbage is a leafy vegetable, consisting out of soft, light green/whitish inner leaves covered with harder and dark green outer leaves. This vegetable is packed with vitamins and minerals and it is widely used in a number of dishes and cultural cuisines. It can be shredded into crisp slaws, braised, sautéed, or added to soups and stews.
