Trichosanthes cucumerina
Like other gourds, the snake gourd is a member of the pumpkin family (Cucurbitaceae) and has seeds similar to its cousin the water melon (Citrullus lanatus). Far more curious than its seeds are the snake gourd’s fruits. As the name implies, they are very long, slender and often wriggly like a snake, depending on the cultivation. The young Snake Gourds are being harvested around 40 to50 days after planting. The long varietals may then be ready when only 16-18 inches, while the shorter cultivars will be around 6-8 inches in length. Snake gourds contain iron, magnesium, potassium, manganese, vitamins A, B, and C, fibre, calcium, and phosphorus. Snake gourds taste surprisingly like cucumbers and are best suited for cooked applications such as stir-frying, baking and stuffing just like Zucchini.
