Bitter Gourd is one of the most popular vegetables in China, Taiwan, Vietnam, Thailand, India and the Philippines. Bitter Gourd, also called Bitter Melon, has an acquired taste. The plant is grown mainly for the immature fruits, which have a distinct warty exterior and an oblong shape. The fruit is most often eaten green. At this stage, the fruit's flesh is crunchy and watery in texture, similar to cucumber or green bell pepper. The skin is tender and edible. Seeds and pith appear white in unripe fruits; they are not intensely bitter and can be removed before cooking. Bitter gourds are very low in calories but dense with precious nutrients. It is an excellent source of vitamins B1, B2, and B3, C, magnesium, folate, zinc, phosphorus, manganese, and has high dietary fibre. It is rich in iron, contains twice the beta-carotene of broccoli, twice the calcium of spinach, and twice the potassium of a banana.
