Amaranthus Leaves, also known as Cheera, is cultivated and consumed as a leafy vegetable throughout the world. Amaranth greens are find on the Asian markets in all colours shades of red, purple and green, depending on the variety. Though younger amaranth greens can be eaten raw in salads, the mature plants need to be cooked, simmered or stir-fried. Slightly astringent when raw, the greens turn soft and mellow as they cook down. It is an excellent source of dietary fibre, protein and vitamin B. For example Amaranth Leaves contain three times more calcium and three times more niacin (vitamin B3) than Spinach Leaves.
